Am I the only one who struggles with eating breakfast, especially a healthy one? It’s a known fact that breakfast is the most important meal of the day but sometimes it’s hard to squeeze it in during your morning rush. During the week, I am normally scrambling to get dressed and walk Bentley so I can get out the door all because I hit snooze three too many times. When I do have a few extra seconds my go-to breakfast to grab is greek yogurt with granola and green tea.
On the weekends, I am able to treat myself to a nice home cooked breakfast. One of my favorite meals to whip up is oatmeal. It’s simple, healthy, filling and the variations you can make are endless. I’m not talking about that packet stuff that has tons of preservatives, additives, sugars and weirdly dried fruit pieces. I love making stovetop oatmeal with a fresh fruit compote to top it off. I make sure the ingredients are fresh, organic, and all natural. The best thing about this recipe is that you can easily make extra so that all you have to do is warm it up during the week. So put down those Pop-Tarts and don’t you dare pull into that McDonald’s drive thru line (I despise that place). Give this recipe a try and I hope you enjoy it!
Oatmeal:
- 1 Cup Oats (I use old-fashioned oats but you can use whichever type of oats you prefer)
- 1 3/4 Cup of Almond Milk (Whole or any other type of nut milk will work)
- Pinch of Salt
Cinnamon Peach Compote
- 4 Organic Peaches, pitted and roughly diced
- 1 1/2 Tablespoon Unsalted Butter
- 1/2 Teaspoon Cinnamon
- 1/4 Teaspoon Nutmeg
- 1/2 Teaspoon Vanilla Extract
- 1/4 Cup Organic Maple Syrup
- Juice of 1/2 Organic Lemon
- Zest of 1 Organic Lemon
*I use organic peaches in this recipe but they can be substituted easily for apples or pears. You can adjust the amounts if you are cooking for more or less by doubling or halving this recipe.
Directions:
In a small saucepan combine almond milk and salt over medium heat. Bring to a boil and add the oats. Reduce heat to medium-low and simmer, stirring occasionally (keep an eye on your oatmeal so that it does not boil over). Cook until oats are done and desired consistency is reached, about 5 minutes.
While your oats are cooking, melt unsalted butter in a non-stick skillet over medium-high heat. Add in organic peaches, cinnamon and nutmeg and sauté for two minutes. Next, add in organic lemon juice, zest, vanilla extract and organic maple syrup. Reduce heat to low while stirring the ingredients together. Simmer for about 5 minutes or until fruit reaches your desired softness.
Scoop a nice amount of oats into your bowl and top it with some of your warm cinnamon peach compote. Want to amp it up a little bit? Try adding a tablespoon of sweetened condensed milk to the bottom of your bowl before you add your oats, or top your oatmeal with sliced almonds! Simply AMAZING
