Ok so, I am not a big meat eater and when I do eat meat I will only eat chicken, turkey or sushi (yes, I know sushi is not a meat per se but just roll with it). One of my favorite ways to cook chicken is with fresh cilantro and lime. This combination is to die for and is so flavorful and fresh. Cilantro-Lime chicken is so simple, healthy and perfect for spring and summer grilling.What you will need:
- 1 ½ lbs Boneless Skinless Chicken Breast
- ¼ Cup Fresh Cilantro (stems and leaves)
- 3 Cloves of Garlic
- 2 Limes, juiced and zested
- 3 Tablespoons Extra Virgin Olive Oil
- 1 Teaspoon Salt
- 1 Teaspoon Brown Sugar
- 1 Teaspoon Red Chili Flakes
- 1 Large Zip-lock bag
Place chicken in a large plastic zip-lock bag. Add the remaining ingredients into a food processor or blender and blend until smooth. Pour the marinade over the chicken and seal the bag. Refrigerate chicken and let marinate for at least 2 hours (I prefer 6 hours to overnight). Remove chicken from the zip-lock bag and discard the remaining marinade. Over medium-high heat, grill or pan fry the chicken until the juices run clear, about 15 minutes. Serve with rice and homemade black beans or fresh avocado. This also pairs well with a margarita or watermelon lemonade! So refreshing!
