Have you ever discovered that one dish, that one meal, that you could eat almost every single day and be completely content and happy with life? For me, that would be tacos. I am obsessed with tacos. Veggie tacos, chicken tacos, tacos on Tuesday, tacos for breakfast… I don’t care. Just give me all the freaking tacos. Tacos are a happy food for me and I never seem to get tired of them. Let me add, I am a soft taco only kind of chick. I had one encounter with a hard shell taco as a little girl. I took one bite and the shell cracked in two, causing me to drop all of the goodness into my lap. Needless to say, I was never again about that hard taco life.
There are so many different variations when it comes to tacos, from breakfast tacos with scrambled eggs to veggie tacos with lentils and mushrooms. The possibilities are endless. One of my recent favs has been Turkey Kale Tacos. I made these one evening just by playing the “throw it in the pot and see how it turns out” game and instantly fell in love. I have made different variations of these tacos by adding different ingredients and veggies. Each time it is as bomb as the first. There is really no wrong way to do tacos.
These Turkey Kale Tacos are perfect for your next Taco Tuesday, Tequila Thursday, or whenever you freaking feel like having tacos! And did I mention how quick this meal is? Another added bonus. I love pairing my Turkey Kale Tacos with my super easy Fresh Mango Salsa. Your mouth is watering isn’t it?
What you will need:
- 1 Tablespoon Extra Virgin Olive Oil
- ½ to 1lb Lean Organic Ground Turkey
- 1 Large bunch of Organic Kale, chopped with stems removed
- 1 Package of your favorite *Taco Seasoning (this is my go to)
- 1 Small Organic Onion, chopped
- Your favorite corn tortillas, warmed for serving (I love these)
*If you make your own taco seasoning/sauce then go for it. I have yet to master mine so I totally cheat and take a little help from the all-natural taco sauce gods.
In a large nonstick skillet, heat oil over medium high heat. Add in ground turkey and chopped onion (I’m not a huge fan of onions so I omitted them but they do add awesome flavor). Cook and stir often until the ground turkey is fully cooked.
Add chopped kale and taco seasoning/sauce and stir. Reduce heat to medium low and cover. Simmer until kale is softened and wilted, about 3 minutes.
Serve in warm corn tortillas with your favorite toppings. I typically go for fresh cilantro, avocado, sour cream and mango salsa!
Fresh Mango Salsa
- 2 Organic Mangoes, peeled, pitted and diced
- 1 Jalapeño Pepper, seeded and diced
- 1 Organic Bell Pepper, diced
- ½ Cup Organic Red Onion, diced
- Juice of 1 Large Lime
- ¼ Cup fresh Cilantro, chopped
- Salt

In a mixing bowl, toss together the mango, jalapeño, bell pepper, cilantro, onion and lime juice. Mix well. Sprinkle salt, seasoning to taste. Place salsa in the refrigerator for about 10 minutes, allowing all of the fresh flavors to marinate.
